The Producer: Finca Las Flores

Finca Las Flores, located in the Huila region of Colombia, is known for its dedication to experimental processing and high-quality micro-lots. The farm is led by Diego Bermudez, a pioneer in fermentation techniques that enhance flavour complexity in coffee. His approach combines scientific precision with a passion for pushing boundaries in coffee production.

The Varietal: Sidra

Sidra is a rare varietal believed to be a hybrid of Bourbon and Typica. It is prized for its vibrant acidity, floral aromatics, and structured sweetness, often reminiscent of Ethiopian landrace varieties. Grown at high altitudes, Sidra develops a rich and complex flavour profile, making it a favourite among coffee enthusiasts.

The Processing: Anaerobic Thermal Shock

This coffee undergoes Anaerobic Thermal Shock, an advanced processing method developed by Bermudez. Here’s how it works:

  • Anaerobic Fermentation: The coffee cherries are fermented in a controlled, oxygen-free environment, allowing specific microorganisms to enhance unique flavour compounds.
  • Thermal Shock: After fermentation, the coffee is washed with hot and cold water alternately, a process that stabilises and intensifies its aromatic properties.
  • Precision Drying: The beans are dried slowly to ensure optimal sugar retention and flavour development.

This innovative process results in an exceptionally clean, expressive, and fruit-forward cup with a well-defined structure.

  • Grind Size: Medium-fine
  • Water Temperature: 93-95°C
  • Brew Time: 2:45 – 3:15 minutes
