About Fazenda Sertão:
Nestled in the rolling hills of Carmo de Minas, Fazenda Sertão spans 850 hectares, with 330 hectares dedicated to coffee cultivation. The farm thrives under the stewardship of José Isidro Pereira, a second-generation coffee producer who transitioned from dentistry to farming upon inheriting the estate from his mother. The unique topography, with slopes up to 50%, not only protects the coffee plants from frost but also ensures uniform ripening and reduced humidity-related diseases.
Processing Method: Natural (Dry):
At Fazenda Sertão, the Natural (Dry) processing method is meticulously executed to enhance the coffee's inherent sweetness and complexity:
Selective Harvesting: Only the ripest cherries are handpicked to ensure optimal quality.
Drying: The cherries are spread on patios to sun-dry, allowing the fruit's natural sugars to infuse the beans, imparting distinctive flavour notes.
Monitoring: Throughout the drying process, the cherries are regularly turned and monitored to achieve uniform drying and prevent over-fermentation.
This careful attention to detail results in a cup that beautifully showcases the rich flavours characteristic of the Red Catuai varietal.
