Nestled in the rolling hills of Carmo de MinasFazenda Sertão spans 850 hectares, with 330 hectares dedicated to coffee cultivation. The farm thrives under the stewardship of José Isidro Pereira, a second-generation coffee producer who transitioned from dentistry to farming upon inheriting the estate from his mother. The unique topography, with slopes up to 50%, not only protects the coffee plants from frost but also ensures uniform ripening and reduced humidity-related diseases.

Processing Method: Natural (Dry):

At Fazenda Sertão, the Natural (Dry) processing method is meticulously executed to enhance the coffee's inherent sweetness and complexity:

Selective Harvesting: Only the ripest cherries are handpicked to ensure optimal quality.

Drying: The cherries are spread on patios to sun-dry, allowing the fruit's natural sugars to infuse the beans, imparting distinctive flavour notes.

Monitoring: Throughout the drying process, the cherries are regularly turned and monitored to achieve uniform drying and prevent over-fermentation.

This careful attention to detail results in a cup that beautifully showcases the rich flavours characteristic of the Red Catuai varietal.

Red Catuai is a hybrid of Mundo Novo and Caturra, developed in Brazil for its high yield and resilience.
