The Story Behind Finca La Divisa

Some coffee farms just grow beans. Finca La Divisa grows legacies.

Tucked away in Circasia, Colombia, this family-run farm has been crafting coffee magic since 1995, when John Gomez took over. After years of perfecting his craft, his son Sebastian returned in 2014 with fresh ideas and a deep love for specialty coffee. Now, they’re known for standout varietals like Pink Bourbon and Geisha, with a focus on sustainability, innovation, and downright delicious coffee.

How It’s Made: The Secret Sauce (Okay, It’s Science)

Sebastian doesn’t just roast coffee—he engineers flavour. This Pink Bourbon is grown at 1,700–1,800 MASL, where cooler temperatures let it ripen slow and sweet. Then comes the washed process, a meticulous routine that keeps things clean, crisp, and vibrant.

Here’s the play-by-play:

  • Hand-picked cherries (only the juiciest, no slackers allowed)
  • 30-hour underwater fermentation (fancy talk for “flavour booster”)
  • Careful depulping & washing (bye-bye, unnecessary extras)
  • Slow, controlled drying (because patience = better coffee)

The result? A brew bursting with zingy apple tartness, silky stone fruit sweetness, and a smooth, nutty kiss of amaretto.

Pink Bourbon: The Coffee That Keeps You Guessing

Is it a Red Bourbon? A Yellow Bourbon? Neither! Pink Bourbon is a rare mutation that showed up in San Adolfo, Huila, like a mysterious stranger in a black-and-white film. It’s known for its crisp acidity, floral aromatics, and a honey-like sweetness that makes every sip feel like a plot twist in the best way possible.
