Finca La Divisa: A Family Tradition
Finca La Divisa, located in Circasia, has been in the Gomez family since 1995, when Sebastian’s father, John Gomez, bought the farm. With over 30 years of experience, John laid the foundation for Sebastian’s current approach to specialty coffee. After traveling abroad and learning from the growing specialty coffee movement, Sebastian Gomez returned to Colombia in 2014 to transform the family’s focus, cultivating unique varietals like Pink Bourbon and Geisha.
Meticulous Coffee Processing
Sebastian's Pink Bourbon varietal is grown at an altitude of 1700-1800 MASL, ensuring optimal growing conditions for this unique coffee. The cherries are carefully selected at peak ripeness and undergo a 30-hour underwater fermentationbefore being de-pulped and washed. The beans are then dried under controlled conditions to preserve their distinct flavor profile.
This washed process brings out the clean, sweet, and fruity character of the coffee, creating a cup that is well-balanced with bright acidity and soft undertones of green spice, crisp apples, and stonefruit.
Why Pink Bourbon?
The Pink Bourbon varietal is celebrated for its crisp acidity and combination of fruity and floral notes. Though the exact origin of Pink Bourbon is unclear, it is believed to have developed as a natural mutation at high elevations in San Adolfo, Huila. Today, this varietal thrives in high-altitude environments and offers a uniquely refreshing coffee experience, rich in complexity and sweetness.
