Finca Los Nogales: A Legacy of Resilience and Innovation

Finca Los Nogales is more than just a coffee farm—it is a symbol of perseverance and family unity. After the tragic death of their father, Ricaurte Hernandez, in 2013, the farm was taken over by his children, Oscar, Angie, and Olga, who continue to manage it with passion and dedication. Their innovative approach to coffee farming has earned them recognition, including winning the inaugural Colombian Cup of Excellence in 2005. Today, they are known for producing some of Colombia’s most exciting and flavorful coffees.

Unique Processing: Thermal Shock Extended Washed Fermentation

This Yellow Colombia lot undergoes an intricate Thermal Shock Extended Washed Fermentation process. First, the whole cherries are subjected to a thermal shock, alternating between 80°C water for 20 seconds and 15°C water for 3 minutes, repeated several times to enhance flavor retention. The cherries are then depulped and the seeds are fermented with mossto and yeast for 120 hours, ensuring optimal sugar breakdown and flavor development. After fermentation, the coffee is sun-dried on raised beds for 21 days to lock in the complex flavors.

This meticulous process results in a coffee that is both vibrant and balanced, with tropical fruit flavors and a smooth, sweet finish.

The Yellow Colombia varietal is a cross between Typica and Caturra, known for its vibrant tropical fruit notes, such as watermelon and passionfruit, and its velvety mouthfeel. This varietal thrives at the high altitudes of Finca Los Nogales, producing coffees with balanced sweetness, acidity, and berry-like complexity.
